烹調方法
湯餃
1. 大火將水煮滾
2. 收中火,放入餃子
3. 輕輕推開餃子,使其分隔開,避免黏鍋破皮
4. 中火煮3-4分鐘,餃子浮面即可上碟
*由於素餃不含任何肉類,缺少脂坊的黏合作用,故比較容易破皮。建議盡量獨立分開煮用,水煮過程加密輕推餃子,以免黏鍋破皮。
煎餃
1. 大火將鑊燒紅,放油
2. 收中火,排放好餃子,稍為煎香底部(10-20秒)
3. 注入食水,水位約為餃子的1/3至1/2高度
4. 蓋上鑊蓋焗煮6-7分鐘,開蓋見收乾水後即可上碟
